Bamboo is supposed to be naturally anti-microbial, so nice for kitchens, plus I like the clean look.

I'm not sure about that anti-microbial feature --- maybe it's due to the glue, but I had a bamboo napkin holder that sat next to my sink. Water pooled under it and caused black mold which I still can't get rid of after many scrubbings, cleaners, and keeping it high and dry.

Though I have bamboo salad scoops and a tray, and they work nicely. Just be careful that your items don't stay wet.

Most of the bamboo I have has interlocking pieces, no glue. Unless you're talking about what binds the actually solid piece together?

I've gotten a lot of Bamboo accessories that are made in US or Canada. Just check out an eco-friendly store and there should be no issue. Bamboo for these products can even be harvested in North America. It grows so fast that I would estimate it to be a relatively easy venture for a company.
As proof for the anti-microbial properties, I have 100% bamboo socks that, as gross as it sounds, I can wear for a week before any odour, comparable to one light wear develops. If you leave anything really wet though, it will eventually get dank. Half the issue in kitchens however is the slight dampness and the partial drying out of things, so bamboo should be fine.
