Fluorescent lighting is not always pretty. That said, these Super-Sleek T5 fixtures from Brodwax Lighting are a nearly invisible source of undercabinet task lighting in the kitchen. These fixtures are only 3/4" x 1 1/2" in size and come in lengths of up to 58". They're linkable and can come with a toggle on the fixture or with a hard wire box for wiring to a wall switch.

I used these at my house behind a glass backsplash and I love them. There is no buzz or flicker accompanying these fixtures, as was the standard for grandpa fluorescents.

Be sure to use the highest CRI (color rendering index) lamp you can find (shoot for 85-90+) to get the best color rendition (old T8 lamps had CRI's down in the 60's).
