Q: I have multiple chemical sensitivity and am allergic to most building materials. Especially formaldehyde, sulfer, phenol, etc. I am having a difficult time finding some products that are affordable and safe for me for an alternative to Drywall, the taping and mudding. Suggestions on products and where you can find them would be greatly appreciated.

You could do wood paneling
I've heard of a drywall substitute called SIP (Structural Insulated Panels) that's supposedly dust and off-gassing-free. I've never used it on a project or seen an installation but it might be something to look into.

I just found a website detailing this product (Magnesiacore) sounds pretty good.
Old fashioned plaster?
Commercial wood paneling, unless it is just natural wood, often offgasses almost as much as normal drywall, SIPs are replacements for entire wall systems, not drywall, and can offgas even more than drywall unfortunately.
Check out magnesium-based drywall panels, with a clay-based plaster like American Clay, or at least a zero VOC paint.
Wasn't there a post recently about a greener plywood? It won't ever look quite like a drywall wall, but it has other advantages. Hang shelves anywhere you want!
