If baking and constructing your own gingerbread houses is proving too stressful, there certainly are numerous gingerbread kits available at the stores. But there are other options.
One of the easiest we've seen are these biscuit houses spotted over at El hada de papel. The structures are first constructed using cardboard which is then covered over in a layer of cookies or biscuits. Candies and other treats glued on over that using white icing is the final touch. In elementary school, I remember using little cardboard milk cartons (well rinsed, of course) as our "gingerbread" base, then covering them with graham crackers and decorating. Really easy, fast, and fun.
I've made graham cracker gingerbread houses with the kids for the last few years, and we use cardboard 6pack carriers (beer) as the base. Works perfectly, and the house is just the right size.
