Since I really have no in-depth knowledge about anatomy, I figured I needed help.
We luckily live in a very good time as far as educational products are concerned.

White Enamel Flatwa...
The 5-layer puzzel is perfect for my daughter. I was so glad to see that there was a girl version.
A comment there lead me to the book "Me and My Amazing Body" which also looks very good. The Magic School Bus in the Human Body is a good one. Although it does not cover all systems, it's very engaging and accessible to the preschool crowd.
I got that for my son, he likes it, and was taking apart and putting back pieces.
My three-year-old got the squishy body for Christmas and he absolutely loves it. Except now we get weird comments like "I can't go to bed Mummy, my kidneys are hurting!"
