@simoneilene and @erica11216 - the cost of that blanket alone is more than the "budget basics" price of $150 (it's $249 here in Canda).
Anyway, "What's not to love" about white bedding? Having a dog who refuses to not be in the bed. Unless she gets a bath every evening the white bedding would show too much dirt and look awful. A subtle grey colour does the trick!
I hear that, Carrotsticks! Our black cat sheds all our white bedding ... but I gladly lint roll it up in the morning. To me, it's worth the sacrifice to have crisp white bedding.
I've had the Nate Berkus line of Target sheets for going on 7 years now and they're still holding up perfectly. I don't know if they still make them the same way, but if they do, highly recommended.

For cotton sheets I wait for a good sale at Macy's or BB&B. As long as it's Egyptian cotton and a solid 300 thread count I think the quality and softness are fine. Or at least they were until I discovered my Rough Linen sheets. Worth the splurge.
My pup gets her own blanket on top of the bed.
I am all about white bedding. Easy to wash and not worry about fading. Crisp simple beautiful.
Does anyone know where to find good WATERBED sheets? Despite their use still...nothing like a heated waterbed in Chicago in the winter...good ones have just disappeared. Stores like BBand Beyond, no longer sell. Even online. Hard to spend money in America sometimes.
Homegoods always has nice white comforters and sheets for awesome prices. I'm finally able to sleep on "luxury" bedding... on a student's budget!
White linens and towels are also frugal. As you wear out pieces from a set you can just replace them without any "matching" issues.
Sherlockian - Amazon has a bunch of choices for waterbed sheets. I, myself, cannot deal with a waterbed....but my dad and his wife have one and I bought some sheets for them recently on Amazon as a gift. They were under $80 with shipping and a high thread count. There were a lot to choose from, too.

Bed Bath & Beyond used to have a 'Hotel' line of sheet sets, 600 thread count - silky and cool on summer nights with just the right amount of softness. I believe the fitted, flat and pillowcase sets were right at $90-100 (or at least they used to be).
I used to spend upwards of $90 for sheets until I discovered those Ikea ones are really not bad! And I don't have $90 to spend on sheets anymore.
Does anyone else have a black cat who absolutely hates white? My cat will attack anything white at night, including my shirts, and only sleeps on a black blanket at the end of the bed.
