My two-year-old, Joshua, is just smitten with Elmo. Just the sight of the furry little monster causes him to light up like Fourth of July fireworks. In fact, "Elmo" beat out both "Mama" and "Dada" as one of his first words. So when it came time to plan his second birthday party, we knew we just had to have an Elmo theme.
The invitations were sent out featuring Elmo's face peeking over the side of the card. As for decorations, I started red everything - from streamers, to plates, cups and cutlery. We ordered Elmo balloons, Elmo party hats and a Pin the Nose on the Elmo game. Yet, I knew I wanted something extra special to make our Elmo party unique.
That's when I decided on Elmo cupcakes. It took some trial and error, but I finally settled on the perfect recipe: Red icing with red sugar sprinkled on top; one mini marshmallow, cut in half with a drop of chocolate in the middle for the eyes; one orange peanut M&M for the nose; and a half an Oreo for the mouth. They looked just like Elmo!
The party was a hit and all the kids had fun, especially the birthday boy!
