Years ago an antique dealer at the old Treasure Island Flea Market told us -- as she sold us our first vintage French linen sheets -- that once you sleep on them, you'll never go back to any other kind of bedding. Why linen?
Woudn't linen kind of wrinkle really easily and drive you nuts? I have thee custom linen pillows and don't you dare touch them - as they wrinkle even when you look at them. I'm curious to know, like Quercus above, why linen is popular for sheets?

I sleep on Libeco flannel sheets most of the year, but I love linen. I line dry it and don't find it too wrinkly.
OK. Just one more point about wrinkles. Yes, I'm not all that picky about the wrinkling of my sheets. It's kind of a relaxed lifestyle thing. But I do carefully line-dry. The dryer is a no-no. All that heat makes them wrinkle like crazy. Talking in person with folks at Libeco, I notice they all wear linen wraps or shawls that are a quite wrinkly, but look great.

okay y'all, i posted above - got some linoto sheets for my birthday - and i love them! i'm living here in texas in the 100-degree weather, and they're just so light and cool to the touch! we sleep three in the bed and the linen sheets are a godsend!

I love the look and feel of linen, but if $200-$400 is affordable for a bed sheet set, then count me out.
I am with @twleidy on this one... I LOVE my Linen sheets but I never understood why they were so expensive! Makes it hard to justify getting a second set as these wear out...
Sferra Classico Linen Sheets:
These sheets are stunning in their simplicity and overall beauty, and the quality of the Italian linen is simply wonderful. Having heard of, but never seen linen sheets, I had ordered Irish linen pillowcases to see how well I liked them, and to my surprise I found the Irish linen to be a heavier linen and best suited for the winter months. A few weeks later I was in a linen store and happened to come across these Sferra Classico linen sheets and was impressed by their beauty. They are cooler to sleep on in the hot months than cotton, and I iron the pillowcases and about a foot of the top sheet. Simply beautiful. These sheets are made from the finest Italian linen but you need seriously deep pockets to buy them.

Garnet Hill's Eileen Fisher's Linen Sheets:
I just purchased her pillowcases in rosewater and am returning them. The linen is from China and about a grade B with premium pricing of $165 for a King flat.

I've ordered samples swatch's which haven't arrived yet, but I have read good reviews about them and you can also buy them on amazon and get points if you're signed up for them.
Belgium Linen:
I'm looking forward to seeing the quality of the Belgium linen but so far have not run across any.
Buyer Advice:
If you see linen sheets without a country of origin the linen is probably from China (Garnet Hill) or from India, both (usually) inferior grades of linen.
To follow up on my review above, I received linen samples from Rough Linen and loved the "Smooth Linen" line at affordable prices. They arrived wrapped in tissue paper with a ribbon and a sample of a linen wash. I ordered 2 standard/queen pillowcases to see the quality before ordering their flat sheets. The linen was very good quality for the same exact price as the poor quality linen pillowcases from Eileen Fisher/Garnet Hill (linen from China)!
Rough Linen sheets are also over-sized so you can tuck the bottom sheet in easily. Nice quality for a reasonable price.
