We did a quick search and found a similar thread on Chowhound. The West Loop's Northwestern Cutlery (1810 W Lake Street) scored the highest marks. They have a wide selection of brands including All Clad, Le Creuset and Wusthof, and they've earned stellar reviews on Yelp.
Another option that was mentioned is C & R Equipment Service (3601 S. Halsted), a short drive from Chinatown. They carry both big and small items, from ovens to woks. The central Chinatown neighborhood also has a number of smaller shops with pots, pans and dishes.
Any other suggestions for Christopher?

then AA Equipment at 5207 N. Milwaukee is an option. I had some luck there (but please note that I don't think there are other similar stores nearby).

This is just one shop on Madison. If you walk up and down the street you will find a number of commercial restaurant equipment places. The places that are left in this area could most be compared to the Bowery.
Definitely NW Cutlery for knives and other small wares.
Definitely Chinatown for other small wares.
If you have your own business I would try to set up an account at Jetro-Restaurant Depot.

There is one on Madison right around Racine. And I don't know if it is still open there is one on Milwaukee just north of Grand Ave. but it was closing soon.
