Q: I am looking for wooden wall art to display in my apartment. I am having trouble finding large pieces and every wooden wall art piece for sale, seems to be in panels. I am looking for something large, carved, and dark wood. Any suggestions? I live in the Chicago area if you have specific places in mind.

Salvage One on Hubbard.
But the type of artwork you are describing is essentially two-dimensional, and large 2-d artwork is susceptible to twisting, wracking, and warping.
Which is why such artwork is most often made in panels, regardless of if the artwork is made of wood, ceramic, stone, or other material.

You should look at the work of local artist Dolan Geiman:

He has amazing large scale works using recycled wood. They'll be at the Lakeview East Festival of the Arts later this month.

But you may be able to schedule a studio visit.

How much are you willing to spend?
That will determine originals vs. mass production.
Large, joined items vs. separate panels.
Start with basics:

Options include using items that are obviously mass production AND unique...

Do you have any examples of what you were looking for that came in panels instead of solids?

Maybe Ten Thousand Villages? One of my favorite stores---fair trade imports, most/all hand produced.

if there's one in the area, you can check out Cost Plus/World Market (not really sure what it's called anymore)... they have all sorts of stuff like that.

I've had good luck at Goodwill and Savers. Might be worth a 5-minute look at their "wooden stuff" section.
