Some people are naturals with the chopsticks. As for the rest of us....there are Chopstick Kids.
Essentially just hinges that link two chopsticks together, these 'kids' help tame unwieldy chopsticks from scissoring past one another, sending food flying. Not that that has ever happened to us, of course!
Chopstick Kids come as a set of 2 (one boy, one girl), and include a pair of melamine chopsticks, although in our experience, using your own wooden sticks might be a little easier, as the melamine is pretty slippery. $10.99 for the washable, food-safe set.

My wife and in-laws swear by the popcorn trick.
While my parents stuffed chopsticks into my fingers when I was quite young at the various Chinese, Japanese, and Korean places we ate and I finally just got it, her parents took a more instructive, and less messy, route.
The popped bowls of popcorn and gave them chopsticks to practice. The swear by the technique.
Either way, we're both pretty handy with them.
