Now that I have kids, food while we're on vacation is my biggest anxiety. On longer trips that we drive to, I'd rather not have the kids eat every single meal out. So to make sure they eat healthy, at least some of the time, I do some meal prep in advance.
A little bit of preparation in the days leading up to a family road trip means less stress for me while we're actually there. A few days before we're scheduled to leave, I make a bit pot of chicken noodle soup, vegetable soup or chili. These all are super easy to make, and freeze well in individual portions. I also make homemade pasta sauce. Just boil some pasta and heat up the sauce for a quick and easy dinner. Casseroles and lasagnas also are great one-dish meals that freeze well.
For a week-long trip, I usually make and pack 3 to 4 meals. It takes the pressure off when I can tell the kids want a homecooked meal but I haven't planned ahead to buy the necessary ingredients or don't have the necessary equipment.
