In Chicago, a vacant meatpacking plant is being transformed into The Plant, a 93,500 square foot space that will produce lots of food but without the waste. The energy system will use food waste to produce methane that can be converted into electricity and heat. The project will be fully complete by 2017, but tenants already include hydroponic farms, fish farms, and a kombucha brewery.
