We've always liked Bambu, and at their booth this year we got a glimpse of the new Hybrid cutting boards they'll be launching in the fall, made of bamboo on the front side and cork on the side and back. We have a regular Bambu cutting board, but we're looking forward to this hybrid for the cork's lightweight slip-resistance and naturally hypo-allergenic, anti-microbial, and anti-fungal properties...

We have had bamboo that has fallen apart in only a few moths of causal use in the kitchen. While I am all for bamboo and I have no idea if the product mentioned here will start coming apart in only a few months, I do know that for a sustainable material to make a viable product it needs to be well made and long lasting too. A well made plastic cutting board that lasts 10 years is still better for the environment than a bamboo one that comes apart in a few months. We need to drive back, or order in the mail, new products to replace any product that breaks quickly. Well made and long lasting should be at the top of every list for environmentally friendly products.
I have a bamboo cutting board that has held up very well for a few years now (the brand is Island Bamboo). I think the key is to not wash with soap and keep it oiled.
