We love any opportunity to point out that we have tons of great archives that may offer ideas and answers to your questions...and this is one of 'em! We've blogged some interesting wallpaper (and wallpaper panel) resources here at AT:SF, which can be found here. NY's wallpaper archives are here, Chicago's are here, and LA's are here.
But to your question directly: here are a few sources and designers we particularly like. (Note that a lot of the really beautiful stuff in this category seems to come from England, so if you get tempted make sure to check that they will ship at decent rates.)

Wandrlust has some truly drool-worthy wallpapers, including the Florence Broadhurst papers. Not cheap by any stretch, but lovely.

Osborne & Little have a showroom at the SFDC. And the whole Cole & Son line can be viewed at the Lee Jofa showroom.
