There are actually tons of great resources out there, but a lot of them are geared for older kids, not preschoolers. DK Books is always a great place to start for learning books, and I've included one of theirs here. Plus, I found a couple of other books with illustrations that look really appealing. I've heard great reviews of the discontinued Your Human Body book too, which you can find used on Amazon. Beleduc's puzzle is a great beginners choice, and the Janod puzzle will grow with your kids - just highlight more details as they get older. I have a feeling I'll be learning right alongside my kiddo.

Also try 'Everyone poops' by Taro Gomi, and 'The Gas We Pas' by Shinta Cho. Pre-schoolers love these books and they present information in a way that is completely appropriate, but also factually correct.
Both my kids love(d) Your Insides by Joanna Cole. It has some clear pages that over lay a page with a body that show the circulatory and nervous systems and the major organs. Both my children got interested in hearing how their bodies worked about age 4.
My son likes this book. It's a fun way to learn about the digestive system and to encourage healthy eating. Recommended for 4-10.
My 5yo and I have been reading "Your Body" (from Usborne) for a couple years now... he still loves it.

A couple of weeks ago she told me that she wasn't going to get sick because her white blood cells were attacking the germs.
I bought the Beleduc layered puzzle for my nephew when he was about two. He still loves it a year later and likes to teach others how to do it. Such a great puzzle and the pieces are very sturdy!
My 4.5-year-old daughter loves "Look Inside Your Body" (Poke and Look Learning Books) by Gina Ingoglia. The language and level of explanation is perfect for this age group.
I second the book "Your Body" by Usborne-really any books published by Usborne. My four-year-old loves the flaps that you can open and discover what is underneath.

Over the past year my 4 yr old has gotten a lot of play out of the life-size foam skeleton puzzle from Learning Resources, about $25. Also "What Happens to Your Hamburger" from the Read-and-Find-Out science series (we've enjoyed a lot of the books in that series). And "Jessica's x-ray" by Pat Zonta, which has "real" xray overlays incorporated into the book.
Also a huge hit is Toca Boca's Doctor app. It's not hugely educational but it's well designed and my preschooler loves it.
My son loved the Magic Schoolbus books about the human body when he was a preschooler. They are great because the information scales up as your child gets older. You start out with the main story and can add the margin information later on.
