On the other hand we will say that, while this note seems perfectly obvious to us, we appreciate the tip regarding the top sheet going wrong side up. (That way when you fold it back over the blanket, the right side—the decorative, printed side—will show.) We are surprised how many folks don’t know that.
I prefer to use two flat sheets. Since my partner tends to move about, I also use elastic clips. They're fun, since they look a bit like stocking suspenders.
I always check at hotels, too. It's a little quirk of mine. Most of them use two flat sheets as well. I'm assuming because it makes laundering and sorting easier.
I too use two flat sheets. And I don't buy sheet sets, so that makes mixing and matching between the flat sheets easier... and fun.
