On a recent camping trip, my husband and I introduced our kiddos to the awesomeness that is s'mores. They were, of course, immediately smitten. After spotting recipes for homemade marshmallows and graham crackers at The Urban Baker, I've got a hankering to blow their minds with these super-deluxe homemade versions.
Homemade graham crackers aren't daunting, but the idea of making marshmallows is. But the recipe given at The Urban Baker, based on a Martha Stewart recipe, claims to be super easy, taking only about 20 minutes from start to finish. Add some good chocolate and you've got everything you need for the ultimate s'mores.

I've seen countless recipes for homemade marshmellows. Can someone please offer up a gelatin-free version?

It kills me to see Hershey's chocolate pictured with homemade graham crackers and marshmallows. For the love of food get some chocolate that isn't complete crap!

We've made the Martha Stewart recipe a number of times and it works nicely. Actually that was in preparation for making Momma Reiner's Fudge Covered Marshmallows.

I've thought to make homemade marshmallows to take camping a number of times, but the truth is between the laundry, packing, and meal prep I never get around to it. I wonder if they'd freeze well?

i haven't tried it yet, but need to, because my older son found out what gelatin is and he really doesn't want to eat it, but loves marshmallows!
wow, i didn't know what gelatin was so i had to google it, yuk. Oh well, hasn't killed me yet.
For anyone who has tried making marshmallows but not succeeded: I've tried both the Martha recipe and Ina Garten's. I've made at least half a dozen batches total and recommend Ina Garten's over Martha's without hesitation. Ina's is the closest to fail-proof. And making marshmallows is really easy--and they're so good, and make great gifts. It's no harder than making homemade ice cream; boil a few things, combine that with other things, whip, whip, whip. Pour into a pan. Let set. Cut. Good luck!
