We're loving the Module Kitchen -- it's simple, basic, flexible. The Dutch firm Drift says that you can change the set-up all the time because the pieces are not permanently built-in... although we're not sure how that would work with the water and gas lines, the idea really appeals to us.

These modular systems are popular in Europe where you often have to provide your own kitchen when you rent an apartment.

Do you mean, how would you conceal gas and water lines? That can be done a couple of different ways. I would recommend a decorative trap for the sink as that will be exposed no matter what. But the gas and supply lines are thin and flexible and can be run along the back legs of the units or even in the space between the legs.
In my situation, I wasn't able to run the gas up a leg so I had a galvanized chase fabricated with an acess panel. I would like to eventually have it made out of stainless steel but at least you can get the idea:

I think Leslie meant how would you move it around when gas and water lines are stationary--meaning you can't move those so how could you move the units? But I could see how the non-water and gas pieces could be moved and that might be nice....
How does this differ from Ikea's Varde line, except in price and Ikea has more doors? Non-fitted kitchens are great.
Drift's site needs to lose that music, though.
The advantage of mobility comes in handy if you are moving the system from space to space.
One space may have gas and water on the same line. Another place may have the gas and water separated. So once the pieces are properly configured they would not need to be moved around.
Ikea's line is their answer to these higher end systems. With something like this, or my Bulthaup System 20, you have the luxury of furniture quality pieces.
Now that ceiling lamp has got me distracted...
If you live with dogs, cats, or children, this would be a nightmare, IMO. Animal hair in everything. Serveware would be toys. UGH. would make me insane.
