We have friends and family coming to stay with us throughout the week and are getting ready to take a much-anticipated, kid-free vacation this coming weekend, making everything — even meal planning — feel exciting and exhilarating. Even Pizza Friday is getting a new spin on it.

Welcome to This Week’s Meal Plan

Planning my weekly meals is a habit I enjoy. Since I’m frequently asked by friends and family what I’m cooking for dinner each week, I thought it’d be useful to share my weekly meal plan here. Whether you’re just learning to meal plan and looking for a real-life example of how this works or you’re an old pro on the hunt for inspiration, here’s a peek at how I’m feeding my family this week.

I made a big batch of this pasta salad to take to a friend’s cook-out this weekend and ended up with leftovers. The kids love it and the leftovers taste even better than the day it was made. It will be nice to have a no-cook night before the week gets really busy.

Tuesday: Flank Steak and Fattoush

My best friend from culinary school is driving through Atlanta with his family, so we are grilling flank steaks and I’m testing a new fattoush recipe (think: pita bread panzanella) while we catch up.

My family is obsessed with these crispy chicken bites! I made them a couple weekends ago and my daughter has been requesting them ever since. Serving these with a big green salad for all.

A tip for serving salad to little kids: Chop everything extra small and serve them more of the chopped vegetables than lettuce. We call this “finger salad” because they can easily pick at it with their fingers — not forks.

This promises to be a super fast, super satisfying breakfast-for-dinner meal. I’ll trade fried eggs for the poached eggs, as my husband and daughter prefer a “crispy egg” (as they call it), and serve hearty, crunchy toast on the side.

We are hosting my in-laws for dinner on Friday. They are actually coming to watch the kids while my husband and I go out of town for the weekend! So we are doing mini pizzas using puff pastry instead of pizza dough for our usual pizza Friday.
