We are loving everything we hear about the prices that Levi Capland has, so I would check him our first. You really need to find what you want and then price it around.
For showrooms you can see a lot at Gringers in the East Village or at Bloom & Krup on 14th street. We also keep hearing good things about Homeclick.com and CompactAppliance.com. (Thanks, Kimiko!) MGR
I don't know if it can be built into a wall, but I've been really happy with the stand-alone standard/convection hybrid Delonghi oven I bought at Zabars about 3 years ago. It's my only oven and bakes and roasts evenly, has pretty accurate temperature settings, etc.
