I've been looking high and low for this stool I first saw it in the tour of Katherine's amazing apartment. Does anyone have any leads on the designer and where I might be able to purchase it?

It is the Covey Stoll designed for Herman Miller it comes in both aluminum and maple. If you search online for the chair you will find multiple places to buy it.
It's the "Covey Model 6 Stool," designed by Jeff Covey, for Herman Miller. Around $300 or so, I think.

It's called the 6 because it ships flat in six pieces, if I am not mistaken.
