Ecoresin is really cool - they have a section on their website where they sell offcuts and returns of a huge variety of their materials at a discount. We got pieces for our cabinet fronts that we have yet to install, but we've already used one insert in a doggy door and found it was easy to cut and work with.

you could definitely use it for your back splash! we use this product lots at my work (arch firm). and have used it on numerous backsplashes.
but it can get quite pricey. and i think you have to order it by the sheet, which i think is like 4'x8' or something.

but...you can buy their reclaimed stuff (a section on their website) which is much much less than buying a full sheet, that is, if you can find something that will work for you! also, check out lightblocks & lumicor, they are similar products.

Occasionally they have a sale, but act fast because things had a tendency of disappearing before I could get them into my cart. But $300 got us enough for the cabinet fronts, a panel above the stairs and the dog door.

I just bought a beautiful translucent green 1" thick remnant from 3Form's Reclaim website for only $30, going to cut it into a 2' by 2' to mount on a pedestal table base for a little breakfast table. I'll post pictures if it works out.
