Look sharp. It is so nice to watch this community chipping in. We recieved a good recommendation yesterday for a knife sharpener that read something like this:

In addition to knives, they will sharpen scissors, pinking shears, toenail and cuticle nippers, and straight blades. For a small knife, figure $3.50 for sharpening. A 10-inch chef's knife with a high carbon stainless blade is $6.75. Closed weekends.

I used to work at Bon Appetit Magazine where we often wrote about the importance of keeping your knives sharp. Every year I drop off all my Wusthof knives. The store is so honest that they will tell me which knives need to be sharpened and which don't (and no, they don't know that I used to work at Bon Appetit.)
This is the only place in Manhattan that I would trust with my knives.
Westpfal has been open longer than any other grinder in New York - since 1847. It's a humble store, but they definately know what they're doing and are very very friendly.
Westphal has moved next door to 107 West 30th Street, but the phone number is unchanged.
FYI - Westpfal is now (August 27, 2008) located at 115 W. 25th St., between Fifth and Sixth Aves. The phone number is the same.
