This is a great idea for at home, but I don't know of ANY schools where you can pack peanut butter in your child's lunch.

My daughter had a classmate with a deathly allergic to PB, so we are cautious with all snacks/lunches that go to school. PB is allowed at her school, but we opt for Sunbutter. I think I'll make a Sunbutter version of these for the Labor Day picnic to see if they pass my daughter's inspection. :) We don't like raisins or shredded coconut, so I'll have to explore some substitutes.

This reminds me of banana and mayonnaise sandwiches I used to eat as a child. (Try it, it's surprisingly good! haha) Banana and Sunbutter would be a nice pairing.

I made mango sushi once, but used organic nori to wrap instead of bread. Yum!
