Um... My shiny new Mac Mini works just fine with my home entertainment center. Maybe yours is broken?
Video goes where it's supposed to: the TV. It comes with a MiniDisplayport -> DVI connector. That goes right into the DVI -> HDMI cable that feeds the TV.
Audio goes where it's supposed to - straight to my Denon receiver - with a $4 mini->TOSlink cable.
I really don't understand why I'd want to bundle the audio and video on the same cable - I'd just have to run an optical cable back from the TV to the receiver anyway, plus hope that the TV split/passed that out correctly (a lot of LCD sets had issues with that from the AVSForum.com reviews I was reading).
