There are so many reasons to love Halloween. As nuts as it might sound, pumpkin seeds happen to be one of them around here. A few years ago, I had a dear coworker that used to supply my habit every October. Homemade, crispy, and oh so salty. We finally got around to making our own this year after stumbling upon some inspiring recipes. Let's just say that after a heavenly evening of noshing, this is all we have left to photograph.
It's tempting to buy another pumpkin just so we can try one of the other variations we saw on Fabulous Foods. It's a toss up between Greek Style and Pumpkin Pie.

I love home made pumpkin seeds! It took me a few years to perfect the process of salting and removing the slimy casing, but we have it down now, and when we make them, they don't last very long either. :)
We ate ourselves sick with our jack o'lantern's seeds this year. Although my son just sucks off the salt, garlic, and paprika and spits the rest out. Weirdo.
