I've been trying to find out the name of the cactus plant pictured above toward the front, looks like a graphic flower. Anyone know? Would it work in a bathroom environment?

If you're referring to the blueish-gray one, I believe it's a type of Echeveria. If you have a south facing window in the bathroom then that would be a good spot for it, but I would tend to reserve the bathroom for plants that need more humidity.
