Good Questions: Non-yellowing white oak floors?

I am putting in new rift-sawn white oak flooring, and wanted to somehow preserve that grayish chalky hue that I love so much (and avoid the yellowing that seems to happen over time). Does anyone have any ideas?

The yellowing is usually from the polyurethane. You could try the water-based polycrylics instead, although I am not sure if they hold up as well- you could research it. Try the Minwax website.
