We actually really like the use of all white plates, and love the depth that was created by gluing each to wood blocks of different proportions - not so handy if you plan to use the plates for a meal (unless you like eating on a little pedestal), but great if they'll be strictly for decoration.
how did the mount the dishes to the wall?

fun in a store or a restaurant; for a home, the more traditional ways to display dishes on a wall might age better

As a long time display person (20 years), I think Anthropologie is the best in the business right now for window display with the exception of maybe Bergdorf's in NYC. They are always innovative and each store, while slightly different, does the theme really well.

I was in the El Seguendo store a few weeks back and one of the visual merchandisers was covering a massive display with some type of Plaster of Paris.
It was very cool to see the process and I am looking forward to seeing the final product.

I really think they need to do a book. They really do a good job with decor at their stores.
