Here's an absolutely lovely all around knife for the kitchen from Heidi Swanson's new online store. I bought a few to try out and discovered that they are SHARP and they need to be kept dry as the blade will rust. Here's the info: "Each Pallarès knife is hand-fashioned from high-quality carbon steel, and set with a boxwood handle. Carbon steel is harder than stainless steel and will hold its edge longer before needing to be sharpened. It's a forever piece made by a third-generation knife smith in the small town of Solsona, Spain, not far from Barcelona. Each piece is hand-stamped."
