First tip: don't use an aluminum pie pan (as pictured).
Second tip: lots of spices. The best crust doesn't make up for a bland filling.
Third tip: serve with a slice of cheese.
I don't use aluminum at home; but in pastry school and at bake shops, the tin pan is standard. Especially is you're giving them away:)
Sometimes when I make apple pie, the top crust stays domed while the filling shrinks down. How can I prevent this?!
@rebecca_f Use a pie bird or cut slits in the crust so it can vent.
@rebecca_f pre-cook your apples a little in the microwave a little so you don't have the dome to begin with (this is a cheat, but I fail at making it work otherwise). Still cut slits in the crust!
Another Tip: Instead of brushing your pie with egg whites (which can gather in low places and create crunch pieces of egg plastic yuck) brush your pie with milk. Soaks into the crust, but also gives you that shiny finish. (Sprinkle sugar ontop for something extra.)
You know, i DID cut slits in the top, and it still domed. Perhaps they needed to be longer? I thought the pie bird was specifically to keep the pie from bubbling over? Do Tell!

I always top apple pies with a struesel topping, straight out of Betty Crocker. Yummier than a top crust IMHO.
