I would collect vintage campers/caravans from all over the globe. All colors/styles/sizes. And, if bribed with bottles of wine, I would even let my friends & family borrow them for camping trips.
I would collect houses. In various styles, in many cities, locations.
I am a huge fan of Anne Rice and New Orleans. I would add her house (which she sold last year) on First Street (in the Garden District in New Orleans) to my collection. For now, I have a picture.

i'm a serious vintage addict, and a professional paper cut artist, & saw this amazing photo in a west elm catalog of a brick wall displaying a collection of framed classic black papercuts (scherenschnitte), a little yellowish & damaged from age - profiles of adults & children... beautiful! ever since i've been trying to create a collection that would go well together for our entrance area. one day i'll get there!

I would collect artglass. But instead of having vast display cabinets of it like a museum, I would have a small storage displays with the bulk of the collection carefully integrated into and among the home's interior furnishings.

My dream collection would be a collection of vintage Japanese etchings and woodblocks.
original art. vintage freak show banners. anything vintage circus/carnival. vintage taxidermy. oddities.

That photo is screaming my name. Yes, I would collect beautiful vintage cars. I would also collect pre-1900's Japanese paintings and geisha related antiques.
I would collect homes. One in Rancho Palos Verdes, one in Manhattan, one in Tuscany, one in Barcelona, one in Paris, one in the Carribean... Money isn't an issue??? The list goes on!

Yeah, collecting and idolizing cars sounds like a -great- idea.

I would collect antique Japanese ivory carvings. I have seen a few on British Antiques Roadshow and find them fascinating.
I would collect fabulous textiles - quilts, suzanis, carpets, etc. And have a place to display them.

I'm planning to collect mid-century art and posters. Ideally, I'd have the full set of Aicher's prints for the 1972 Munich Olympics. A similar thing I plan to collect is copies of Visionaire, or any similar art book.

I can't say I would collect anything beyond about 9 pieces of any type of item. If you collect too many of one thing, then you only get those things for your birthday, Christmas, etc. Although a button collection might be fun to display on stretched canvases.
I'd like to collect apartments. One in every major city. But I guess a more feasible collection would be clocks. I love wall clocks, loads of different frames and shapes on one wall would look great.
