I just baked a batch of chocolate chip cookies last night but the little ones wanted to make fancy sugar ones. I love to decorate cookies as much as the next kid but it can be frustrating when you don't have a good icing recipe. We found this great recipe for royal icing over at Prudent Baby.
It calls for 3 tablespoons of meringue powder, 1 lb confectioners' sugar sifted, and 8 tablespoons warm water (or use 6 tablespoons water plus 2 tablespoons fresh lemon juice).
