I’m a HUGE breakfast person, but I’m not a huge sweet breakfast person. I tend to lean toward savory: eggs and rice, salmon benedict, egg and cheese on a croissant (my go-to Dunkin order). 

At the same time, I love a baked good on the side (or for the table), and my new favorite? This Cinnamon Swirl Coffee Cake Mix.

What You Should Know About Bob’s Red Mill’s Cinnamon Swirl Coffee Cake Mix

Bob’s Red Mill launched this new cake mix back in May at Whole Foods; you can also buy the pouches in bulk online at Amazon. It comes with a packet of cinnamon sugar for topping and swirling and a dry mix — a blend of flours, plus sugar and baking powder — to make the batter.

The instructions are simple: Just whisk together two eggs (it’s worth doing), butter or oil, and milk, then add to the dry mix and combine. After pouring half of the batter into a 8×8-inch baking pan, coat the batter with cinnamon sugar, add the rest of the batter on top, and then sprinkle on the remaining cinnamon sugar. Use a butter knife to swirl throughout the batter. 

I personally made this as ugly as possible without trying, but you can’t taste how it looks. Bake at 350ºF for about 35 to 45 minutes, and let it stand for 10 minutes before eating.

My Honest Review of Bob’s Red Mill’s Cinnamon Swirl Coffee Cake Mix

If you’re looking for a crumbly coffee cake, this is not it. If you’re still here, then know that this is actually so good. I’ve made coffee cake from scratch before, and it either comes out dry, too crumbly, or with not enough flavor.

This mix had none of those issues! After one bite, I knew this was going to be a future pantry staple. It actually tasted better than homemade, like something I’d overpay for at a Brooklyn coffee shop, and have zero regrets about it. It’s light and fluffy, yet perfectly moist. 

The swirls of cinnamon sugar throughout make sure I got a solidly cinnamon flavor, and the top gets a lightly crispy layer that adds a nice bit of crunch for texture.

I shared one slice with a friend who later texted me, “This coffee cake is so good!!!” I froze the rest of the batch I made to keep it around for as long as possible, and it’s become one of my favorite ways to start the morning or have a little mid-morning pick-me-up as I make my second latte. I’d definitely buy it again and plan to pop into Whole Foods ASAP.
