Take a moment and do a quick inventory of the pans you use most in your kitchen. You’ve probably got a collection of stainless steel, nonstick, and maybe some cast iron, all of which have a dedicated purpose. And while it’s unrealistic to expect one pan to do everything, if you’re in the market for a piece of cookware that can do almost everything, you should acquaint yourself with HexClad.

The Kitchn tools editor Riddley has been a fan of the innovative cookware brand for years, and calls the HexClad 10-Inch Hybrid Pan her “go-to pan for frying and scrambling eggs, searing fish, browning chicken thighs, and more.” As the name suggests, HexClad’s Hybrid Pan combines the best of tri-clad stainless steel and nonstick in one super durable pan that can stand up to metal utensils, high oven temperatures, and the dishwasher. And Riddley isn’t the only fan: Gordon Ramsay recently partnered with HexClad, and lovingly refers to the cookware as the “Rolls Royce of pans.” (I think it’s safe to assume he has pretty high standards.) As far as cookware goes, HexClad can be a little pricey, but the very pan Riddley reaches for every day is on serious sale right now.

One of the first things you’ll notice about the pan is the unique honeycomb pattern on the cooking surface. The hexagonal design is made up of a series of stainless steel “peaks” and nonstick “valleys” that work in unison to prevent food from sticking with minimal cooking fat. HexClad’s nonstick ceramic coating is free of chemicals and PFOAs, and resists scratching and flaking, one of the reasons it can handle metal utensils. “I frequently use my fish spatula with it and the surface still looks like new,” says Riddley.

The Hybrid Pan’s ceramic coating is capable of performing at high temperatures, whether you’re cooking over a gas, electric, or induction stove, or want to use it in the oven (up to 500°F). Inside, the pan’s three-ply construction consists of a layer of highly conductive aluminum sandwiched between two stainless steel layers, which gives it excellent temperature control, allowing you to gently cook or sear ingredients without worrying about hot spots or scorching.

The pan’s wide, flat bottom can accommodate a large volume of food and works equally well for searing scallops, cooking eggs, making pancakes, or shallow frying fritto misto. The oven-safe design provides even more versatility, whether you want to finish a frittata in the oven or do the same with a thick chop after searing it on the stovetop.

In Riddley’s words, the pan is “supremely wonderful,” but if, for some reason, you’re not happy with it, HexClad offers an impressive lifetime warranty. So pick up this hot cookware while it’s on sale and give your other pans a break — you just may never need them again.
